Ever since I went gluten free, I have been CRAVING a crunchwrap supreme… so I made one yesterday and it was INCREDIBLE… here is my gluten free, super delish, way healthier version for you! Happy Friday!!
Ingredients:
- 1lb of ground chicken or ground turkey
- Package of gluten free tortillas (big ones) – found at sprouts
- Package of corn tortilla chips
- Low Fat Sour Cream
- Shredded Cheese – Or for the more unhealthy/TacoBell version – Tostitos® Nacho Cheese
- Chili Powder
- Diced tomatoes
- Shredded lettuce
Step 1: Cook the ground meat with chili powder, as if you were making taco meat
Step 2: Heat gluten free tortilla for 20 seconds
Step 3: Lay GF tortilla flat, spread sour cream in a small circle, add two scoops of ground meat and a handful of shredded cheese (or nacho cheese for the less healthier option) – place all in the center of tortilla and top with chips
Step 4: Top with lettuce and tomato – AND 1/4 of a GF tortilla – *this is important so the insides don’t fall out*
Step 5: Starting on the bottom, fold up the tortilla toward the center, continue all the way around until it is all folded over
Step 6: Carefully lift it up and set it fold side down on a non stick pan. Press with a spatula and cook until nice and brown, flip it over and cook the other side. It won’t take long at all.
And there you go! Throw it in a zip lock, take it to work, and heat it up at lunch time with some hot sauce!
