Ok, so here’s the deal… we all know fast food is like a drive thru heart attack waiting to happen. We also have all seen the “make it yourself” recipes that are all organic and have a million ingredients that we can’t pronounce that we also know can’t taste as good. While this makes for a SUPER healthy alternative, I believe in taking everything in moderation. So I have come up with some easy recipes that mirror our favorite fast food items. They aren’t organic and SOME (not all) of the recipes have processed items, but they are 10 times healthier than what you would pull out of that bag when you drive away from the window. PLUS, I will post these recipes that will promise to also be MORE convenient than a drive thru! So, follow this blog for the next 10 days. I will post my 10 favorite EASY copy cat recipes one day at a time. These recipes will copy my top 10 FAVORITE fast food indulgences!

Get ready!!! Here is DAY 1!

Start your day off with your favorite EGG MCMUFFIN!


Egg McMuffins TO GO

12 English muffins
12 round pieces of ham or Canadian bacon
12 slices American cheese
12 large eggs
Pepper to taste

Preheat oven to 350 degrees. Spray a muffin pan with cooking spray. Crack one egg into each muffin container and pepper to taste. Bake for 20-30 minutes or until done.

Assemble the Egg McMuffins with the ham on one side of the muffin and the cheese on the other side, with the egg square in the middle. For a fast and easy breakfast, place the sandwiches in a ziplock freezer bag (wrap individually with parchment paper if desired.. not necessary) and, in the morning, before you jump in the shower, plop one or two in the oven at 350 degrees for 20 minutes! That simple! You don’t even have to waste time driving thru a McDonalds or sitting in a line! Enjoy! More to come tomorrow!
